Stove-Top Black Pepper White Gravy

NO OIL ADDED

This is my go-to gravy and I put it on anything country fried. It’s also amazing with some vegan sausage crumbled up in it over freshly baked biscuits.

MAKES ABOUT 1 CUP (120 ML)

2 tbsp (14 g) white whole wheat flour (or brown rice flour)

1 cup (120 ml) soy milk (or any nondairy milk)

½ tsp salt

⅛–¼ tsp black pepper, or to taste

Toast the flour over low heat in a small, dry skillet until fragrant and light brown, about 3 minutes. Be sure to stir a few times a minute so the flour doesn’t burn.

Whisk in the soy milk (or nondairy milk), salt and pepper. Turn up the heat to medium high. Whisk until it begins to come to a boil.

The moment it turns from thin to medium thick, remove from the stove-top and keep whisking. If it’s a little thin, cook longer, and if it gets too thick, thin it with more nondairy milk.
